Smokey Chili Lime Makes Great Chili
Smokey Chili Lime – As we get into some colder weather, chili comes to mind as a favorite comfort food. Inspiration to make chili included this BBQ rub and boy did it turn out well! A half an onion and a pound of ground chuck was sauteed in a pan to get the ball rolling. A healthy sprinkle of the Smokey Chili Lime was introduced toward the end of this process before adding some (30oz?) of tomato juice. Then a small can of light red kidney beans was added. That was cooked for 15 minutes or so. A decision was made to add two packs of Equal. Then there was a little more Smokey Chili Lime that was added to the mix as was some onion salt. Season to taste!
Not to offend some and to accommodate others, we broke up about half a box of spaghetti and put that in there. (We remembered having lost a chili cook-off due to the absence of spaghetti) The mix was brought up to boiling and left to cook for about 12 minutes. The spaghetti was checked for tenderness and a decision was made to “serve it up!”
Boy was this good! We have to go back and make it again to confirm how much of each seasoning was used. This was seasoned to taste while in the cooking process but it made for some excellent chili!
