Smoked Chocolate Chip Cookies
Ingredients:
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
1 egg
2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 pkg (12oz) semisweet chocolate chips
Instructions:
First, place chocolate chips on a thin sheet of aluminum foil. Do not use a thick pan, this will cause the chocolate to melt. A thin sheet of foil works best, as it does not hold much heat.
Place aluminum foil with chocolate chips on the smoker.
Using a light smoke, cold smoke chocolate chips at no more than 105-110 degrees. If you can get your smoker down to 70-80 degrees, that is preferred. The colder the better.
Smoke chocolate about 20-30 minutes, or until desired smoke flavor is achieved.
Pull off smoker and set to cool.
Meanwhile, mix sugars. butter, vanilla and egg in a large bowl. Stir in flour, baking soda, and salt (dough will be stiff). Once cooled, stir in chocolate chips.
Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
Bake 8 to 10 minutes or until light brown. Cool slightly; remove from cookie sheet. Cool on wire rack.
